¼ cup unsalted butter, melted
3 cups all-purpose flour 2/3 cup sugar 1 Tablespoon baking powder 1 ½ teaspoons salt 1 tsp baking soda 1 ¾ cup buttermilk 2 eggs, well beaten 1 ½ cups raisins or currants 3 packets tsp spices fennel seeds |
Preheat oven to 350 degrees F. Grease a 10-inch oven-proof skillet and line with parchment or waxed paper. Combine flour, baking powder, salt and baking soda and whisk together. You can also sift these ingredients or, as we prefer, give them a quick whir in the bowl of a food processor. In a separate bowl, combine buttermilk, eggs, sugar and half (2 Tablespoons) of the melted butter. Add wet ingredients to dry and stir until just combined. Fold in the raisins or currants and the fennel seeds. Pour batter into the skillet. Brush the top with the remaining butter. Bake until golden and firm to the touch, about 1 hour. Cool for 10 minutes before serving. This is delicious served with slices of crisp, tart apples and cheddar cheese. (adapted from The New York Times) |

Enchilada Casserole
Ingredients:
1 large 13 ounce package Dorios ( save 2 cups for casserole topping)
2 tbsp onion grated
1 10 ounce can chili with beans
10-to-15 ounce enchilada sauce
8 ounce can tomato sauce
1 and 1/2 cups shredded sharp cheddar cheese
Topping Ingredients:
2 cups Doritos
1/2 cup shredded cheddar cheese
1 1/4 cups of sour cream
Directions:
Preheat oven to 375 degrees
Crumble 6 cups Doritos with your hands into a large mixing bowl.
Add the onion, the chili, the enchilada sauce, tomato sauce and 1 and 1/2 cup of cheddar cheese to the crumbled Doritos.
Sit with a rubber spatula to combine. Place mix into an 8 1/2 x 11 - inch oven proof casserole dish.
Bake for 20 mintes
remove from the oven. Spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of the cheeder cheese.
Bake for antoher five minutes and serve.

1 pkg. Bacon Bits
1 Loaf of Frozen Bread
1 Cup Cheddar Cheese
Olive Oil
Directions:
Pull out frozen bread loaf. Let thaw and proof. When it is proof flatten out. Cut into 1 inch squares. Coat with Olive Oil. I use spray Olive Oil much cleaner and faster. Mix into bowl rest of ingredients. Put cut bread dough into the mixture. Mix with hands until all coated. Grease bread pan. Place the bread into pan and let proof again. Make sure to cover when proofing. Cover bread pan with foil for the first 30 Min's of baking. Bake @ 400 for 30-45 Min's. Remove the foil for the last 15 Min's of baking. Watch close to make sure it is not burning when it is uncovered. And then enjoy.

2 T. Lemon Extract

Mix all ingredients together until well mixed. If dough is sticky add flour to your hands. shape into balls. ( not to big of balls ). Set on greased cookie sheet. Bake @ 400 for 7-10 Min's. Cookies will be white but they are done.

Cowboy Breakfast Sandwiches
Ingredients
16 slices Texas toast
Butter
1 pound breakfast sausage, cut into 8 patties
12 eggs
1/2 cup half-and-half
Salt and freshly ground black pepper
1 cup jarred jalapeno slices
Sandwich spread of your choice, such as mayo, spicy sandwich spread or spicy mustard
8 slices cheese, such as American, Cheddar or Cheddar-Jack
Directions
Cook the Texas toast on a griddle over medium heat, using lots of butter. Set aside.
Fry the sausage patties in a skillet over medium heat, flattening with the spatula as they cook. Set aside.
Mix the eggs, half-and-half and some salt and pepper in a separate bowl. Pour the eggs onto the griddle in a rectangular shape. Flip to cook on both sides. Cut the rectangle of eggs into 8 squares and set aside on a plate.
Increase the heat, then jump the jalapeno slices onto the hot griddle. Let them sizzle for a couple of minutes, chopping them with the side of the spatula as they cook. Drop on a tablespoon of butter for flavor. Cook until the jalapenos have some brown and black bits. Remove from the griddle, then set aside.
Spread whatever sandwich spread you'd like to use onto the Texas toast. Top with a sausage patty, eggs, a slice of cheese and some jalapenos. Top with another slice of Texas toast, then wrap in foil for serving.

4 cups vegetable or canola oil
1 can Pillsbury® refrigerated classic pizza crust
1/4cup sugar
1 teasopoon ground cinnamon

1 In deep heavy 3-quart saucepan, heat oil to 350°F. 2 Meanwhile, remove dough from can; do not unroll. Cut dough into 12 (1-inch) slices. Cut each slice in half crosswise to make 24 pieces. Roll each piece into ball; set aside. 3 In small brown paper bag (lunch bag), mix sugar and cinnamon. 4 Carefully place dough balls into hot oil; cook about 30 seconds or until light golden brown. Using wire skimmer or metal slotted spoon, transfer doughnuts to paper bag with sugar-cinnamon. Fold top of bag over; shake until doughnuts are coated. Serve warm.

Dip chicken in honey mixture then roll in bread crumbs. Arrange chicken legs in a shallow oven-proof dish. Cook uncovered for 35-40 minutes until chicken is cooked through. Serve.

Parmesan – Roasted Zucchini
Ingredients
- 2 zucchini – cut into 4ths – length wise
- 1 tablespoon olive oil
- salt
- garlic powder
- black pepper
- 1⁄3 cup parmesan cheese
Instructions
- Preheat oven to 400.
- Lay zucchini on a cookie sheet covered with parchment paper. Brush olive oil on each and sprinkle: salt, pepper, garlic powder.
- Top with cheese.
- Bake for 15 minutes or until zucchini is tender and cheese is browned.
Peanut Butter Cookies
This a fast and easy cookie to make.
- 1 cup of Peanut Butter
- 1 Egg
- 1 cup of Sugar
Preheat oven to 350. Spray cookie sheet with non-stick oil. Mix the 3 indigents above. They will dry looking. Use a spoon or roll out ball size cookie. Place on pan. Bake for 10-15 minutes. They do not look done. But trust me they are. Take out and let cool and enjoy.
I know it sounds weird not to have floor, but it does work.
