Egg Beater Breakfast Tacos

Yields: 4 Tacos

Ingredients
  • 4 whole(s) Josephs' 70 calorie bran tortillas, 70 cal per tortilla
  • 1 1/2 cup(s) Egg beaters, 30 cals per 1/4 cup
  • 1 cup(s) portabella mushrooms, sliced
  • 1/2 teaspoon(s) cayenne pepper
  • 10 stalk(s) asparagus, blanched
  • 1 whole(s) yellow sweet pepper, raw

Directions
  1. Spray frying pan with pam or add olive oil.
  2. Saute sliced mushrooms (and sweet pepper, sliced in strips if desired).
  3. Add Egg Beaters and cayenne pepper to taste.
  4. Warm tortillas in microwave.
  5. Spoon egg/mushroom/sweet pepper onto tortillas.
  6. Add strips of chilled asparagus and hot sauce to taste.
  7. Eat with paper towels! Messy but good!
